Coconut oil is often described as the ‘healthiest oil on earth.’ It’s one of the main products traditionally derived from the coconut kernel. It has been a traditional nutritious staple for thousands of years for those who have been living in the tropical culture. Researchers found that those eating diets high in coconut products were found healthy.

The process starts off with a cold pressed process where milk is extracted from fresh matured coconut and then centrifugally separates the oil from the milk. The entire process is free from preservatives, adding of enzymes, bleaching etc giving you the best of Virgin Coconut Oil.

VCO contains Medium Chain fatty Acids (MCFA) that can improve heath in many ways. One of the smartest choices of good fat that can add to your diet is VCO. Coconut waffles with mangos

Ingredients

  • 1 large egg
  • 3 tablespoons coconut oil, melted
  • pinch of salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 tablespoons sugar
  • 1 cup coconut milk
  • mangos, sliced
  • whipped cream, if desired
  • 1 cup flour
  • maple syrup, if desired

Procedure

In a bowl, mix together the flour, sugar, baking powder, baking soda and a pinch of salt. In liquid measuring cup, whisk together the melted coconut oil, coconut milk and egg. Add the wet ingredients to the dry, stirring until just combined. Let sit while you heat up your waffle iron.

Grease your waffle iron if needed and cook waffles according to waffle iron instructions or until the waffles are golden brown and crispy.

Serve with sliced mangos and cream and syrup, if desired.
